Burritos A flour tortilla filled with shredded or chopped meat, refried beans, grated cheese, sour cream. The tortilla is folded and rolled.
Ceviche Raw fish marinated in lime juice. The acid in the lime juice "cooks" the fish.
Tamales Finely chopped meat and vegetables that is coated with a corn dough called masa and wrapped in a softened corn husk. This package is then tied and steamed until the dough is cooked through.
Enchiladas A tortilla rolled and stuffed with a mixture of meat, cheese, or beans. Served with a sauce spiced with chili.
Fajitas Meat, chicken, or vegetables cut into strips and wrapped in warm tortillas. Garnishes include grilled onions, peppers guacamole, refried beans, and salsa
Chile Relleno A poblano pepper stuffed with cheese or a meat mixture. The chili is covered in an egg batter or corn flour and fried.
Empanada Pastry crust stuffed with meat, vegetable, or fruit filling. Empanadas can be large enough to fill a plate or small enough to fit in your hand.
